This stone is mostly an intermediate step, as jumping straight from 5,000 to 12,000 won’t produce good results. Similar to how using progressive grits of sandpaper requires less labour to produce a good polish, 8,000 grit buffs out scratches from rougher stones, and makes finishing your blade on finer stones an absolute breeze. If your blade is in good shape, this is a good stone to start with.

Knifewear stones are hard, so they last a long time and work quickly.

Always flatten your stone with a truing stone after honing.

This works well

"Bought the Knifewear 220, 1000, 4000, 8000, a spring loaded stone holder, and a Nagura stone. The spring loaded stone holder makes switching easy. The YouTube videos are a blessing. Kitchen knives are cutting better."

Q&A

In one answer you're mentioning this is T380 but in another answer you're mentioning this is junpaku snow white. Can you clarify which one is correct? Because junpaku snow white is IF-0001. Also I'm wondering is this stone expected to develop cracks over time (I understand it is common and acceptable in this grit range. I guess this is T380, maybe T380 has softer binding material that is less likely to develop cracks itself, just a guess, I don't have either stones yet). Thanks
Hey there! The Junpaku and T-380 are in fact the same thing - the Junpaku is the Japanese domestic market name and T-380 are for international sales.
Is this a ceramic stone like choosers and will it cut s110 v
Hi there, it is a ceramic stone, similar to the chosera. It will cut S100V steel, but depending on the knife's application, that might be to fine grit to be sharpening to - Ellie
There's some confusion on the web about the naniwa snow white stone, there is two versions of it, the newest tradtional 8000 (T380) and the original snow white (IF-0001). Do you know which version you carry ?
Hey there, it is T380 version of the stone! - Ellie
Is this a Naniwa "Junpaku snow white" stone?
Yep it is! They just don't export it anymore, so we got them to branded it for us - Ellie
